**History of Biryani:**
Biryani, a popular and flavorful South Asian dish, has its origins rooted in Persian cuisine. It was introduced to the Indian subcontinent by the Mughals during their reign in the 16th century. The word "biryani" comes from the Persian term "birian," meaning "fried before cooking." The Mughals combined their traditional Persian rice dishes with local spices, creating the biryani we know today. Over time, the dish spread across the Indian subcontinent, evolving into various regional varieties such as Hyderabadi, Sindhi, and Bombay biryani.
**Biryani Recipe:**
Here is a simplified chicken biryani recipe:
**Ingredients:**
- 500g chicken
- 2 cups basmati rice
- 1 large onion (thinly sliced)
- 2 tomatoes (chopped)
- ½ cup yogurt
- 2 tablespoons ginger-garlic paste
- 2 green chilies
- 1 tablespoon biryani masala
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder
- 1 cinnamon stick
- 3-4 cloves
- 3-4 cardamom pods
- Salt (to taste)
- Fresh coriander and mint leaves
- Fried onions for garnish
- Saffron milk (optional)
**Instructions:**
1. Cook rice with salt, cardamom, cinnamon, and cloves.
2. In a separate pan, fry onions, ginger-garlic paste, and green chilies. Add spices, yogurt, and chicken. Cook until chicken is done.
3. Layer the rice and chicken alternately in a pot. Top with coriander, mint, and fried onions. Drizzle with saffron milk.
4. Cover and cook on low heat (dum) for 20-25 minutes.
5. Serve hot with raita or salad.

**اجزاء:**
- چکن: 1 کلو (چھوٹے ٹکڑے)
- باسمتی چاول: 3 کپ (بھگوئے ہوئے)
- دہی: 1 کپ
- تیل: 1 کپ
- پیاز: 3 درمیانی (باریک کاٹ لیں)
- ٹماٹر: 2 درمیانے (باریک کاٹ لیں)
- ادرک لہسن کا پیسٹ: 2 چمچ
- سبز مرچ: 4-5 (کاٹ لیں)
- ہلدی: 1 چمچ
- لال مرچ پاؤڈر: 2 چمچ
- دھنیا پاؤڈر: 1 چمچ
- گرم مصالحہ پاؤڈر: 1 چمچ
- نمک: حسب ذائقہ
- تازہ دھنیا اور پودینہ: 1 گڈی (کاٹ لیں)
- لیموں کا رس: 2 چمچ
- زعفران: ایک چٹکی (دودھ میں بھگو لیں)
- کیوڑا: 2 چمچ
- دار چینی: 1 ٹکڑا
- بڑی الائچی: 2
- لونگ: 4-5
- زیرہ: 1 چمچ
**ترکیب:**
1. ایک بڑے برتن میں تیل گرم کریں اور اس میں پیاز سنہری ہونے تک بھون لیں۔
2. اس میں ادرک لہسن کا پیسٹ ڈال کر مزید بھونیں، پھر چکن شامل کریں اور 10 منٹ تک پکائیں۔
3. چکن میں ٹماٹر، دہی، ہلدی، لال مرچ پاؤڈر، دھنیا پاؤڈر، گرم مصالحہ اور نمک ڈال کر اچھی طرح مکس کریں اور ڈھکن ڈھانپ کر درمیانی آنچ پر چکن گلنے تک پکائیں۔
4. دوسری جانب، ایک الگ برتن میں پانی ابالیں اور اس میں دار چینی، بڑی الائچی، لونگ، زیرہ اور نمک ڈال کر چاول کو آدھا پکائیں۔
5. چاول چھان کر ایک طرف رکھیں۔
6. ایک بڑی دیگچی میں پہلے چکن کی تہہ لگائیں، پھر اس پر آدھے چاول ڈالیں، دھنیا، پودینہ اور زعفران والا دودھ چھڑکیں۔ باقی چاول ڈال کر اوپر سے لیموں کا رس اور کیوڑا ڈال دیں۔
7. دیگچی کو ڈھکن سے بند کرکے ہلکی آنچ پر 20-25 منٹ کے لیے دم پر رکھیں۔
8. مزے دار بریانی تیار ہے، رائتہ
یا سلاد کے ساتھ گرم گرم سرو کریں۔
