Mutton Kunna is a traditional dish from the Indian subcontinent, particularly popular in parts of Pakistan, especially in Karachi and Hyderabad. The term "kunna" refers to a slow-cooked, rich meat stew, where "kunna" denotes the earthen pot traditionally used for cooking. This dish has deep roots in Mughal cuisine, known for its elaborate and flavorful dishes. **Recipe of Mutton Kunna:**
Ingredients:
- 1 kg mutton (bone-in pieces)
- 2 large onions (finely sliced)
- 2 tomatoes (chopped)
- 1/2 cup yogurt
- 2 tbsp ginger-garlic paste
- 2-3 green chilies (sliced)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp garam masala
- 1/4 tsp saffron strands (optional)
- 1/4 cup oil or ghee
- Salt to taste
- Fresh coriander (for garnish)
**Instructions:**
1. Heat oil or ghee in a large pot or pressure cooker. Add cumin seeds and sauté until they crackle.
2. Add sliced onions and cook until golden brown.
3. Stir in ginger-garlic paste and green chilies, then add mutton pieces. Cook until the meat is browned on all sides.
4. Add tomatoes, yogurt, coriander powder, turmeric powder, red chili powder, and salt. Stir well and cook for a few minutes.
5. Add enough water to cover the meat, bring to a boil, then reduce heat and simmer. If using a pressure cooker, cook for 30-35 minutes or until the meat is tender.
6. If simmering in a pot, cover and cook on low heat for 1.5 to 2 hours, stirring occasionally, until the meat is tender and the gravy is thickened.
7. Stir in garam masala and saffron strands, if using. Garnish with fresh coriander.
8. Serve hot with naan or rice.

- 2 کھانے کے چمچ ادرک لہسن کا پیسٹ

- 1 چائے کا چمچ زیرہ
- 1 چائے کا چمچ دھنیا پاؤڈر
- 1 چائے کا چمچ ہلدی پاؤڈر
- 1 چائے کا چمچ لال مرچ پاؤڈر
- 1/2 چائے کا چمچ گرم مسالہ
- 1/4 چائے کا چمچ زعفران (اختیاری)
- 1/4 کپ تیل یا گھی
- نمک حسب ذائقہ
- تازہ دھنیا (گارنش کے لیے)
**ترکیب:**
1. ایک بڑے پین یا پریشر ککر میں تیل یا گھی گرم کریں۔ اس میں زیرہ ڈالیں اور کڑکڑائیں۔
2. کٹی ہوئی پیاز ڈال کر سنہری ہونے تک بھونیں۔
3. ادرک لہسن کا پیسٹ اور سبز مرچیں ڈال کر مٹن کے ٹکڑے شامل کریں۔ گوشت کو تمام طرف سے سنہری ہونے تک پکائیں۔
4. ٹماٹر، دہی، دھنیا پاؤڈر، ہلدی پاؤڈر، لال مرچ پاؤڈر اور نمک شامل کریں۔ اچھی طرح مکس کریں اور چند منٹ پکائیں۔
5. اتنی مقدار میں پانی شامل کریں کہ گوشت ڈھک جائے، ابالنے دیں، پھر آنچ کم کر کے ہلکی آنچ پر پکائیں۔ اگر پریشر ککر میں پکائیں تو 30-35 منٹ یا گوشت کے نرم ہونے تک پکائیں۔
6. اگر پین میں پکائیں تو ڈھک کر ہلکی آنچ پر 1.5 سے 2 گھنٹے تک پکائیں، کبھی کبھار ہلاتے رہیں، جب تک گوشت نرم اور گریوی گاڑھی ہو جائے۔
7. آخر میں گرم مسالہ اور زعفران ڈال کر اچھی طرح مکس کریں۔ تازہ دھنیا کے ساتھ گارنش کریں۔
8. گرم گرم نان یا چاول کے ساتھ پیش کریں۔
