### Basic Kimchi Recipe
**Ingredients:**
- 1 medium napa cabbage

- 2 tablespoons fish sauce (or soy sauce for a vegetarian version)
- 2 tablespoons sugar
- 2 tablespoons Korean red pepper flakes (gochugaru)
- 4 green onions, chopped
- 1 medium carrot, julienned
- 1 daikon radish, julienned (optional)
**Instructions:**
1. **Prepare the Cabbage:**
- Cut the napa cabbage lengthwise into quarters and remove the core. Chop the cabbage into bite-sized pieces.
- Dissolve sea salt in water and pour over the cabbage. Toss to coat and let sit for 1-2 hours, turning occasionally.
2. **Make the Kimchi Paste:**
- In a bowl, combine ginger, garlic, fish sauce, sugar, and Korean red pepper flakes. Mix until well combined.
3. **Rinse and Drain Cabbage:**
- After the cabbage has soaked, rinse it thoroughly under cold water to remove excess salt. Drain well.
4. **Mix the Kimchi:**
- In a large bowl, combine the cabbage, green onions, carrot, and radish. Add the kimchi paste and mix thoroughly with your hands (wear gloves if desired) until the cabbage is evenly coated.
5. **Pack into Jars:**
- Pack the kimchi mixture tightly into clean jars, leaving some space at the top. Press down to remove air bubbles.
6. **Ferment:**
- Seal the jars and let them ferment at room temperature for 1-2 days, depending on how tangy you want it. After fermentation, store the kimchi in the refrigerator.
Kimchi can be enjoyed on its own or used in various dishes like kimchi fried rice or kimchi stew.
